Diced mutton, root veg and pearl barley in a rich rosemary and thyme sauce
Description
One-pot cooking doesn't get much simpler than Irish stew. Tender pieces of leg of mutton, slow-cooked with onions and a rich lamb stock, chunky British potatoes, carrots and peas. Pearl barley is added to the stew which is seasoned with rosemary, thyme and white pepper.
